Ingredients of the Basque cake with black cherries for 6 people:

  • 2 shortcrust pastry
  • 200g of black cherry jam
  • 3 tablespoon of almond powder
  • 1 egg yolk

Preparation of the basque cake with black cherries 

  • Preheat the oven to 170°
  • In a pie dish, place the shortcrust pastry, then the almond powder, the black cherry jam, then cover with the second shortcrust pastry
  • Press the edges well so that the cake is tightly closed. Brush with egg yolk and draw crosshairs with a fork.
  • Bake for 40 minutes

The Basque cake with black cherries is usually eaten slightly lukewarm
