The old-fashioned Caen-style tripe recipe
The tripes à la mode from Caen are a gourmet Norman preparation with cider and calvados. The traditional recipe for tripes that cook for a long time with vegetables.

- 2 kg of blanched tripe
- 2 calf's feet
- 1 bottle of raw cider
- 4 tablespoons of calvados
- 6 carrots
- 3 leeks
- 6 onions
- 2 cloves of garlic
- 1 bouquet garni
- 2 cloves
- 200g of flour
- salt, pepper
Preparation of Old-fashioned Caen-style guts
- Cut the tripe into squares of 5 cm on each side. Dice the foot pulpit. Keep the bones and put them in a square of knotted muslin.
- Peel the carrots, garlic cloves and onions. Cut carrots and onions into thick rings. Chop the garlic. Clean and cut the leeks into sections
- In an earthenware terrine with a lid, place a layer of vegetables, then a layer of tripe. Add the bouquet garni, the calf's feet, the small bag with the bones and the cloves. Season with salt and pepper, then add the remaining tripe and vegetables.
- Add the cider and the calvados. Close the terrine. In a bowl, mix the flour with a little water and make a pudding to put around the terrine to close it well.
- Leave to bake in the oven at 120 ° for 8 hours.
