But who is Anna who gave her name to this recipe? In fact we don't know anything about it! Maybe a "lioness" of the Second Empire who went to the English Cafe, or maybe Anna Damiens, an actress who inspired many Parisian chefs

Ingredients of anna apples with truffle for 4 people:

  • 1 Kg of potatoes
  • Salt pepper
  • 160 gr of butter
  • 2 tablespoons of truffle oil

Preparation of anna apples with truffle 

  • Peel the potatoes, rinse and dry them. Cut them into very thin rings.
  • Put a little butter in a frying pan, and put the potatoes to brown; then gradually add the remaining butter
  • Let it cook covered for about 5 minutes
  • Place the potatoes on greaseproof paper, arranging them in the shape of a rosette with a few thick potato slices
  • Transfer to the hot oven so that the Anna apples finish cooking and become very crispy! Add a dash of truffle oil after cooking. So your Anna Apples will be crispy on the outside and melting on the inside
