The recipe for cotton candy ice cream

A gourmet ice cream for young and old alike!

Ingredients of the cotton candy ice cream for 4 people:

  • 4 egg yolks
  • 50 g of powdered sugar
  • 1 teaspoon of cornstarch
  • 30 cl of milk
  • 20 cl of fresh cream
  • 12 tbsp cotton candy syrup

Preparation cotton candy ice cream 

  • Mix by whisking the egg yolks, sugar, cornflour with a little milk, until smooth.
  • Boil the remaining milk in a heavy-bottomed saucepan, then gently pour it over the previous mixture, whisking to homogenize well.
  • Tip everything into the pan and cook very gently, stirring, until the mixture is quite thick and covers the spoon.
  • Pour this cream into a dish and put it in the refrigerator, until it is cold.
  • Whisk (I'm siphoning it up) the cream and incorporate it into the preparation, as well as the cotton candy syrup, the pink sugar and the coloring.
  • Pour everything into the ice cream molds and freeze for at least 6 hours
