Ingredients of the truffle and cauliflower crunchy roll for 4 people:

For the almond shard dough with truffle:

  • 200 g of flour
  • 100g of butter
  • 1 egg
  • Salt, pepper
  • 1 bag of almonds with truffle, 100g

For the truffle cauliflower sauce:

  • 500g of cauliflower
  • Salt, pepper
  • 2 tablespoons of truffle oil
  • A few slices of truffle

Preparation of Crunchy truffle and cauliflower rolls

  • Start by preparing the dough, mixing the flour, softened butter, egg, salt and pepper to form a ball and place there in a cool place for 30 minutes
  • Wash the cauliflower and the leather for 30 minutes with steam. Then mix them, season with salt and pepper and add a drizzle of truffle oil.
  • Crush the almonds, place them on the work surface and spread the dough on top and cut it into 4 rectangles of the same size. Roll up each rectangle on rolls and put to bake for 20 minutes in the oven.
  • Take out the dough rolls, carefully remove them from the tubes, and fill with the cauliflower cream. Decorate with a slice of truffle on each side of the roll
  • Enjoy lukewarm
