Landes salad recipe

Ingredients for 4 people

  • 300g of green beans
  • 125g of whole duck foie gras
  • 200g of candied gizzards
  • a few slivered almonds
  • 1 tablespoon of raspberry vinegar
  • 3 tablespoons of oil
  • 1 tablespoon of dijon mustard

Preparation of the Landes salad:

Remove the stalks and cook the green beans in boiling salted water for 10 minutes.

Cut the foie gras into slices.

Slice the candied gizzards and heat them with a stove

Prepare a vinaigrette by mixing mustard, raspberry vinegar and oil.

Place a little green beans on a plate, season with the vinaigrette. Place the gizzards and the foie gras. Sprinkle with a few slivered almonds for decoration.
