The recipe for pork stir-fry with beer and chestnuts
The pork stir-fry with beer and chestnuts is a traditional Corsican recipe. Thanks to a gentle and long cooking, the pork becomes candied and is gorged with beer sauce in a subtle alliance.
Ingredients of the pork stir-fry with beer and chestnuts for 4 people:
- 1 kg of pork stir-fry
- 1 L of dark beer
- 1 onion
- 250 gr of smoked bacon
- 250 g of chestnuts
- olive oil
- thyme, bay leaf, sage, rosemary

- Heat the olive oil in a cast iron casserole dish, and fry the pork in the very hot oil so that it is well browned. Then add the bacon and the chopped onion and let it brown.
- Once the pork is well cooked, add the thyme, bay leaf, sage, rosemary, and deglaze with half of the beer to cover the pork. Add 100g of chestnuts, and simmer very very gently covered for 2 hours. Regularly add a little beer and a little water. After 2 hours, turn off the heat and let it rest.
- 1 hour before serving, turn the heat back on and simmer again over a very low heat, removing the lid so that the sauce reduces a little, and add the remaining chestnuts
This dish can be served with grilled gnocchi or steamed potatoes.
