The recipe for gratinated onion soup

Ingredients of the real onion soup for 4 people:
- 4 yellow onions
- 1.5 l of chicken stock, or 1.5l of water and a stock cube
- 3 medium-sized potatoes
- salt, pepper
- 20g of butter
- 100g of grated gruyère cheese
- croutons
Preparation of the onion soup
- Peel the onions and potatoes and cut into small pieces
- In a casserole dish or saucepan, melt the butter and put the onions and potatoes in it. Fry for 5 to 10 minutes while the onions are a little caramelized.
- Add the chicken stock, or the water and the stock cube. Pepper and salt very lightly
- Let it cook gently for 1 and a half hours
- Pass the onion soup through a blender, pour into plates and put a little Gruyère cheese on the soup and spend a few moments under the grill of the oven
- Serve the onion soup hot with croutons of bread
