The recipe for green asparagus velouté

Today we are going to make a Green Asparagus Velouté
Ingredients of the green asparagus soup for 4 people:
- 1 Kg of green asparagus
- 1/2 Liter of chicken broth
- 40 gr of butter
- 30 cl of whole fresh cream
- 2 tbsp flour
Preparation of the green asparagus cream soup
- rinse the asparagus and cut off the ends; put the ends of the asparagus in the chicken broth and cook gently
- Strain the broth and collect the asparagus
- Put the asparagus, the butter cut into pieces, the salt and pepper, a ladleful of broth, the flour and the crème fraiche in a saucepan and pass everything through a blender
- Cook the cream soup for 5 minutes, and correct the consistency by adding broth.
- Pour into plates and put a few sprigs of fine herbs.
