The recipe for shortbread with strawberry jam 

A great classic of French pastries. Simple to make, these small shortbread cookies with strawberry jam will delight young and old.

Ingredients of shortbread with strawberry jam

  • 250 gr of soft butter
  • 125 gr of icing sugar
  • 3 egg yolks
  • 1 packet of vanilla sugar
  • 450 gr of Flour
  • 50 gr of cornflour
  • 1 teaspoon of yeast
  • 1 jar of strawberry jam

Preparation of shortbread with strawberry jam

  • Mix the butter and icing sugar to obtain a creamy mixture. Add the egg yolks one by one then the packet of vanilla sugar.
  • Mix the flour, the cornflour and the baking powder then incorporate into the previous mixture.
  • Form a ball with the resulting dough and set aside to cool for 30 minutes.
  • Roll out the dough (thickness 5 mm) on a lightly floured work surface (not too much otherwise the dough will split). Cut out shapes using your cookie cutters. Preheat your oven to 180 ° C then bake your shortbread cookies for 12 to 15 minutes.
  • Once the shortbread cookies have completely cooled, spread the strawberry jam on the base and sprinkle the icing sugar on the hollowed-out part (for a nice finish use a tea strainer).
  • Assemble the shortbread two by two and enjoy!
