The recipe for cod brandade
Cod brandade is a traditional, comforting and generous dish! Easy to prepare this cod brandade recipe will seduce the most gourmands!
Ingredients of the cod brandade for 4 people:
- 500 g of cod fillets, desalted
- 500 g of potatoes
- 4 cloves of garlic
- 1 onion
- 2 persil persil cubes (or fresh parsley)
- chives
- 15 cl of olive oil
- 1 large knob of butter
- 10 cl of milk
Preparation of cod brandade
- The day before, desalt the cod fillets by soaking them in a large volume of cold water. Rinse them, change the water and put them back to soak, do this manipulation 2-3 times and leave to soak overnight in cold water
- On the same day, start by peeling and cutting the potatoes into pieces. Cook them for about twenty minutes in a pot of boiling water. Once your potatoes are cooked, mash them into a puree using a Chinois, a fork or a potato masher. Add a large knob of butter and the milk that you have heated. Whisk your puree vigorously while adding almost all the olive oil (save a little to fry your onions) little by little. Keep your puree warm.
- Once the puree is done, in a sauté pan fry the chopped onion with the chopped garlic cloves, the chives and the flat persil in olive oil. Rinse your cod fillets, drain them and wipe them dry with a clean cloth. As soon as your onions start to be translucent and a little golden, add the cod fillets. Cook over low heat for a few minutes, crumbling the cod fillets with a spatula.
- Preheat your oven th. 7-8 (200°C). Add your crumbled cod fillets to the mashed potatoes and mix everything well. Put your cod brandade with mashed potatoes in a gratin dish and smooth the brandade with a fork. Bake the cod brandade with mashed potatoes for 15 minutes and then take it out of the oven.
Cod brandade is served with a well-seasoned green salad.
