The recipe for honey ice cream
Honey ice cream, an original, sweet and fragrant homemade ice cream recipe! Depending on the honeys used, this ice cream will develop aromas of caramel, sometimes also of crème brulée!
Ingredients of the honey ice cream for 4 people:
- 4 egg yolks
- 10 g of sugar
- 200 mL of milk
- 300 mL of liquid cream (not lightened)
- 120 g of honey
Preparation of honey ice cream
- In a bowl, whisk the egg yolks with the sugar until it whitens and foams slightly.
- In a saucepan, heat the milk, cream and honey, while stirring. Turn off the heat as soon as the first broths appear.
- Pour everything over the egg yolks and mix.
- Return the preparation to the pan and heat for a few minutes over low heat, while mixing constantly. The mixture should thicken slightly and coat the spoon.
- Pour the mixture into the salad bowl. Let cool, film, and put the ice cream in the freezer for a few hours. Take it out and whisk it again to remove the crystals, then put it back in the freezer
- Take out the ice cream a few minutes before serving!
