In the heart of winter, why not put a touch of exoticism on the plate? With this typical Caribbean dish based on lobster and herbs: Lobster fricassee

Ingredients of the lobster fricassee for 4 people:

  • 1 lobster of 1.5 to 2 kg
  • 2 onions
  • 4 spring onions
  • 4 cloves of garlic
  • 4 large tomatoes
  • 1 hot pepper
  • 1 sprig of thyme
  • 1 lemon juice
  • Oil, salt, pepper

Preparation of lobster fricassee :

  • Immerse the lobster in a pot full of boiling water for 15 minutes, listen to it and let it cool. Cut it into regular sections. Heat a little oil in a casserole dish and fry the onions, spring onions and garlic, finely chopped.
  • Add the peeled and diced tomatoes, then the lobster pieces; season with salt and pepper. Add the chilli and thyme.
  • Wet with a glass of water. Cover and simmer for 20 minutes. Add the lemon juice at the end of cooking.
  • Serve with white rice or sweet potatoes
