Ingredients of the lobster fricassee for 4 people:
1 lobster of 1.5 to 2 kg
2 onions
4 spring onions
4 cloves of garlic
4 large tomatoes
1 hot pepper
1 sprig of thyme
1 lemon juice
Oil, salt, pepper
Preparation of lobster fricassee :
Immerse the lobster in a pot full of boiling water for 15 minutes, listen to it and let it cool. Cut it into regular sections. Heat a little oil in a casserole dish and fry the onions, spring onions and garlic, finely chopped.
Add the peeled and diced tomatoes, then the lobster pieces; season with salt and pepper. Add the chilli and thyme.
Wet with a glass of water. Cover and simmer for 20 minutes. Add the lemon juice at the end of cooking.
